Regional and Traditional Cooking Techniques

Cooking is the art, science, and craft of using heat to make food more palatable, digestible, nutritious, or safe to eat. It covers techniques ranging from grilling over an open fire to baking in ovens, boiling, steaming, and frying, and it is practiced in every human society. Archaeological evidence points to the deliberate use of cooking fires by at least 300,000 years ago, with some researchers proposing that human ancestors began cooking as early as one to two million years ago. The spread of agriculture, trade, and technologies such as pottery for boiling water broadened the range of techniques available to cooks over time.
