Gui refers to grilled dishes in Korean cuisine, most often built around meat or fish, though vegetarian versions also exist. The term comes from the Korean verb gupda, meaning to grill. At traditional restaurants the food is cooked tableside over charcoal, and diners receive an array of side dishes and individual bowls of rice; the cooked protein is then cut into bite-sized pieces and eaten wrapped with rice, fresh greens, sliced garlic, and ssamjang sauce.
