Hangi is a traditional Maori method from New Zealand of cooking food using rocks heated in a fire and buried in a pit oven called an umu. The technique allows large quantities of food to be prepared at once, and it remains in use today for large gatherings and special occasions because it needs no commercial cooking equipment.
