Huff paste is a historical English technique for protecting meat during roasting, using a stiff pie shell made from a mixture of flour, suet and boiling water to encase the meat. Once cooked, the pastry forms a tough protective layer around the food and is generally discarded as virtually inedible, though the shell absorbs the meat's juices as it cooks and was historically sometimes eaten afterward by house servants.
