Pit barbecue is a method, and the below-ground apparatus used for it, of cooking meat and root vegetables buried in a pit beneath the earth. Indigenous peoples around the world have used earth ovens of this kind for thousands of years. In the United States and Mexico the term is often associated with the Eastern Seaboard barbecue belt and colonial California, where beef, pork and goat are the meats most commonly cooked this way.
