Schwenker is a regional grilling technique from the German state of Saarland and neighboring parts of the Mosel Valley and Rhineland-Palatinate, in which a marinated pork neck steak, traditionally seasoned with a green herb or red paprika marinade, is grilled on a schwenker, a fire bowl with a swinging grill hung from a tripod or gallows-like frame. Turkey variants have also become popular. The person who operates the grill is likewise called a Schwenker, or less often a Schwenkermeister.
