Shaokao

Shaokao is the Chinese term for barbecue and refers to heavily spiced, skewered meats and vegetables grilled over an open flame, most often sold as street food from stalls and night market stands across China. It is a significant part of Chinese street food culture and counts as a form of xiaochi, or small eats. The best known variant is yangrouchuan, or lamb skewers, though the term covers a range of grilled, skewered foods prepared the same way, with the word describing both the cooking method itself and the finished dishes it produces.
