Teppanyaki

Regional and Traditional Cooking Techniques

Teppanyaki is a Japanese cooking style, developed after the Second World War, in which food, typically meat, seafood and vegetables, is cooked on a large flat iron griddle called a teppan. The name combines teppan, iron plate, and yaki, grilled, broiled or pan-fried, and outside Japan the term has become closely associated with theatrical tableside cooking performances, though the technique itself is simply griddle cooking on a flat iron surface.
