Aligue fried rice

Rice, Grain and Starch Dishes

Aligue fried rice, also called crab fat fried rice or aligue rice, is a Filipino fried rice dish made by stir-frying pre-cooked rice with aligue, the crab fat known in Tagalog as taba ng talangka, together with toasted garlic, spring onions, black pepper and rock salt, and optionally butter. The crab fat gives the rice a vivid orange-yellow color that is traditional for the dish. Cooks may combine it with seafood such as shrimp and squid and serve it on its own, or serve it beside meat dishes. It is a variant of sinangag, the Filipino garlic fried rice, and it resembles bagoong fried rice, which is flavored with fermented shrimp paste instead of crab fat.
