Charleston red rice, known locally simply as red rice, is a rice dish of the South Carolina and Georgia coast cooked with crushed tomatoes in place of water, giving it its characteristic color, along with bacon or smoked pork sausage and a seasoning base of celery, bell peppers and onions. It was brought to the United States by enslaved West Africans and remains closely associated with the Gullah and Geechee people of the coastal Lowcountry. Its preparation closely resembles West African dishes such as thieboudienne and jollof rice, reflecting how African cooking traditions were preserved and adapted in the American South.
