Chawanmushi

Chawanmushi, meaning tea cup steam or steamed in a tea bowl, is a savory Japanese egg custard dish, unlike most custards which are sweet, and is served as part of a meal rather than as a dessert. The egg mixture is seasoned with soy sauce, dashi and mirin and combined with ingredients such as shiitake mushrooms, kamaboko fish cake, lily root, ginkgo nuts and shrimp before being steamed in a tea cup like vessel. Because its custard texture makes it impractical to eat with chopsticks, chawanmushi is one of the few Japanese dishes eaten with a spoon, and a version topped with udon noodles is known as odamaki mushi.
