Caldo Verde

Soups and Broths

Caldo verde, meaning green broth in Portuguese, is a popular soup of Portuguese cuisine made from julienned Portuguese cabbage known as couve galega, potatoes, olive oil, onion, garlic, salt and black pepper, with kale or mustard greens sometimes substituting for the traditional cabbage. It originated in the Minho province of northern Portugal, based on an earlier recipe brought to Portugal by English merchants, and has since become a nationally beloved dish that traveled with Portuguese emigrant communities around the world; in 2011 it was named one of Portugal's Seven Wonders of Gastronomy. The soup is traditionally served in earthenware bowls called tigelas, accompanied by slices of Portuguese sausage such as paio, chourico or linguica and by broa, a cornbread or rye bread, and it commonly appears at weddings, birthdays and other celebrations as well as before a main course or as a late supper.
