Olivier salad, also known as Russian salad or Stolichny salad, is a traditional salad of Russian cuisine whose creation is generally attributed to chef Lucien Olivier at Moscow's Hermitage restaurant in the 1860s, where it became the restaurant's signature dish. Modern recipes are usually made with diced boiled potatoes, carrots, and brined dill pickles or cucumber, together with optional eggs, green peas, onions, or apples, and optional meats such as diced boiled chicken, cured sausage, ham, or hot dogs, dressed with mayonnaise and sometimes seasoned with mustard. It remains popular across the post-Soviet states and other former Eastern Bloc countries.
