Cream soup

Soups and Broths

A cream soup is a soup prepared using cream, light cream, half and half, or milk as a defining ingredient. In many recipes the dairy component is stirred in near the end of cooking, for example after the base of the soup has already been pureed, so that the cream finishes the dish rather than cooking down with the other ingredients.
