Dotori-muk, or acorn jelly, is a Korean jelly dish made from acorn starch, which has a high degree of gelatinization. The dish originated in ancient times, when oak trees in the mountains across Korea produced acorns each autumn in quantities abundant enough to serve as a viable food source. Dotori-muk does not spoil easily, making its long shelf life useful for long journeys.
