Dum Aloo

Dum aloo, also called dam aloo or, in Kashmiri, dum olav, is a potato based curry dish whose name combines dum, meaning steam cooked or slow cooked, with aloo, meaning potato. It originates in Kashmir and is part of traditional Kashmiri Pandit cuisine from the Kashmir Valley, where it is prepared with yogurt or khoya and often a cashew paste, distinct from the tomato and onion based variation eaten in the Bhojpuri region of Uttar Pradesh and Bihar and in West Bengal.
