Empal gentong is a spicy, curry-like beef soup that comes from Cirebon in West Java, Indonesia. It belongs to the broad soto family of Indonesian soups and is close to gulai, and it is traditionally cooked over a firewood fire in a gentong, the Javanese word for a clay pot. The soup is made from cuts of beef together with offal such as intestine, tripe and lung, simmered in a curry-like spice mixture with coconut milk, garlic and chilies, and it is finished with chives and sambal in the form of chili powder. It is eaten with steamed rice, ketupat or lontong.
