Halawet el jibn

Breads, Flatbreads and Savory Pastries

Halawet el jibn, meaning cheese sweet, is a Syrian dessert made from a semolina and cheese dough rolled around a filling of qishta, a clotted cream. Its exact place of origin is disputed between the Syrian cities of Hama and Homs, and it is eaten across the Levant, having also been carried by Syrian immigrants to Turkey and Germany. It is typically served at room temperature, garnished with pistachio and rose water or orange flower water, and in summer it is often topped with an Arabic ice cream known as booza.
