The pistachio is a small to medium-sized tree of the cashew family whose seeds are widely consumed as food, used as an ingredient in desserts, chocolate, candy and ice cream and made into paste or butter; as a tree nut, pistachios are considered a priority allergen capable of inducing allergic reactions in susceptible people. In 2024, world production of pistachios reached 1.4 million tonnes, with the United States, Iran and Turkey together accounting for 87 percent of the total.
