Hingel

Noodle and Dumpling Dishes

Hingel is a dumpling found in the South and North Caucasus, similar to manti, whose name in Azerbaijani Turkish comes from a combination of the words for khan and to come. A meat-filled version, stuffed with ground meat, onion, garlic and parsley and served with a melted butter and yogurt sauce, is associated with the Turkish province of Ardahan and Posof, while a stuffed potato version, sometimes called Sivas mantisi, comes from Sivas and Erzurum in eastern Anatolia; in some Sivas variants the dough is shaped into triangles and boiled plain, without filling.
