California Roll

Rice, Grain and Starch Dishes

A California roll, also called California maki, is a sushi variety made with imitation crab, avocado and cucumber, sometimes with crab salad in place of crab stick. In the United States it is typically prepared as uramaki, an inside-out roll with the rice on the outside sprinkled with toasted sesame seeds or roe, while versions outside the United States more often follow the traditional futomaki style with the nori seaweed wrapped on the outside. FAQs

Who invented the California roll?

No single inventor is agreed on. Tasting Table reports that food historians and news outlets dispute the Los Angeles origin claims and now conclude that the California roll did not originate in L.A. or even California. It says a more widely agreed-upon origin occurred farther up the coast in Vancouver, British Columbia, and it credits chef Hidekazu Tojo, whom it describes as an officially recognized cultural ambassador for Japanese cuisine, with inventing what we now call the California roll under a different name entirely.
