Bocadillo, also called guava paste or guava jelly, is a Hispanic American confection made from guava pulp and panela, an unrefined whole cane sugar, formed into a small, firm, deep red rectangular block, with variants made from banana or coconut. It is eaten widely across Colombia, Costa Rica, Ecuador, Panama and Venezuela, typically alongside cheese, spread on bread, or on its own, and is traditionally wrapped in bijao leaves to help preserve it. The town of Velez in the Santander department of Colombia is a major center of production and gives its name to the Velez style variant, which was nominated as a national cultural symbol of Colombia in 2006.
