Mayonnaise, commonly called mayo, is a thick, creamy sauce with a rich, tangy taste commonly used on sandwiches, hamburgers, bound salads and French fries, and it also serves as the base for other sauces, including tartar sauce, fry sauce, remoulade, salsa golf, ranch dressing and rouille. It is an emulsion of oil, egg yolk and an acid, either vinegar or lemon juice, with numerous flavor variations, and its appearance ranges from nearly white to pale yellow, with a consistency ranging from a light cream to a thick gel. Commercial eggless versions are available for people who avoid eggs.
