Scaccia, also called scacciata, is a Sicilian stuffed flatbread made from a very thin, rectangular sheet of dough folded on itself three or four times, filled, and baked; it can be eaten hot or cold. Popular fillings include ricotta with onion, cheese and tomato, tomato and onion, or tomato and eggplant, varying with region and season. The dish is most associated with the Ragusa and Siracusa provinces of Sicily and was carried by Italian immigrants to communities in the United States, notably Middletown, Connecticut. It emerged as peasant food at the end of the seventeenth century and grew in prominence through the eighteenth century, gaining particular recognition after a prince served it at a Christmas celebration in 1763; it remains a traditional holiday food in Sicily. Its name comes from the Sicilian word for crushing or flattening.
