Nettle soup is a soup prepared from stinging nettles, most often gathered in spring and early summer while the nettle buds are still young. It is eaten today mainly in Scandinavia, Finland, Iran, Ireland, the United Kingdom and Eastern Europe, with regional differences in recipe, although consumption of nettles in soup was historically far more widespread.
