Piyaz

Salads

Piyaz is a bean salad or meze eaten in Turkish and Persian cuisine, made from boiled beans of various kinds tossed with raw onion, parsley and sumac, sometimes with a boiled egg added. Its name comes from an old Iranian word for onion, later applied to onion-based salads generally. Regional versions vary widely: in Antalya it is treated as a main dish dressed with a tahini-based tarator sauce, in Gaziantep it is made with mung beans, and it can also be prepared with chickpeas or green lentils.
