Quesabirria

Roasted, Grilled and Fried Dishes

Quesabirria is a Mexican dish that originated among taco vendors in Tijuana, made by folding birria style stewed beef and melted cheese into a tortilla, then dipping the tortilla in the fat rendered from the stew before grilling it, and serving the finished taco alongside a cup of the broth for dipping. It grew out of the traditional birria stew of Jalisco, with cheese added by Tijuana vendors to create the newer dish. Birria itself was originally made with goat meat, but quesabirria today is most often made with beef, particularly brisket.
