Sarde in saor

Salads, Dips, Sandwiches and Fermented Cold Dishes

Sarde in saor is a Venetian antipasto of fried sardines dressed with sweet and sour onions, pine nuts and raisins, served as a form of cicchetti in Venice's bacari wine bars. It is made by layering onions cooked with vinegar and olive oil with the fried sardines in terracotta containers, and is left to sit for at least a day so the flavors can develop before serving. The dish grew out of a Renaissance-era preservation technique used by Venetian fishermen to keep food edible on long voyages, and its addition of raisins and pine nuts reflects Venice's position as a hub on Silk Road trade routes.
