Stuffed peppers is a dish common to many cuisines, made of hollowed or halved bell peppers filled with a variety of fillings, often including meat, vegetables, cheese, rice or sauce, then baked or otherwise cooked. Regional versions vary widely: a Cantonese version fills the peppers with dace fish paste, Spain's pimientos rellenos often use piquillo peppers stuffed with Manchego cheese, chicken or cod in red sauce, and Egypt's mahshi felfel combines rice with parsley, cilantro and dill simmered in tomato sauce. Mexico's chile rellenos stuff poblano peppers with cheese, coat them in egg batter and fry them, Hungarian and Bulgarian versions use local peppers with their own seasonings, and American versions typically combine ground beef with rice or breadcrumbs baked in tomato sauce.
