Wild rice soup is a soup found in Minnesotan cuisine, made with a light broth, cream, carrots, celery and wild rice, usually along with chicken or ham. Despite only appearing around the 1970s, it is often considered one of Minnesota's most famous dishes; it was invented by Keith Kersten at the Orion Room in Minneapolis as a way to use up leftover wild rice, and the original recipe combined a béchamel sauce with wild rice and ham.
