Amberjack

Amberjacks are Atlantic and Pacific fish in the genus Seriola, found in warmer ocean waters worldwide and valued in food cultures globally, with Pacific varieties holding particular importance in Japanese cuisine. The group includes the greater and lesser amberjack of the Atlantic along with Pacific relatives such as the yellowtail and the Almaco jack, as well as the Atlantic's banded rudderfish; nearly all Seriola species are classed as amberjacks, with Seriola hippos as the notable exception.
