Borage oil is pressed from the seeds of the borage plant (Borago officinalis), a flowering herb native to the Mediterranean region now cultivated for its seed oil in cooler climates including Canada and the United Kingdom. The oil is notable for carrying one of the highest known concentrations of gamma linolenic acid, an omega six fatty acid, of any commercially pressed seed oil, considerably higher than evening primrose oil. It is used mainly as a nutritional supplement rather than a cooking oil, typically sold in capsule form, though the fresh leaves and flowers of the borage plant itself have a long culinary history separate from the seed oil.
