Camelina Oil

Fats and Oils

Camelina oil is pressed from the seeds of Camelina sativa, also called false flax or gold-of-pleasure, an oilseed crop cultivated in Europe and Central Asia since the Bronze Age and more recently revived for its hardiness on marginal land. The oil has a distinctive nutty, slightly grassy flavor and is notably rich in omega-3 alpha-linolenic acid alongside natural antioxidants that give it a longer shelf life than many other unrefined oils. It is used mainly as a finishing or salad oil rather than for high-heat cooking, since its beneficial fatty acids degrade under sustained high temperatures.
