Chicharron is fried pork skin, and in some regional variations fried pork belly or fatty cuts, cooked until the skin puffs into a crisp, crackling texture. It is prepared across Spain and Latin America, as well as in the Philippines where a similar fried pork skin snack is called chicharon, and is eaten as a snack on its own, seasoned with salt, chili or lime, or used as a crunchy topping and ingredient in dishes such as pozole and various stews. The pork rind sold in the United States as a packaged snack food is the same basic product under its English name.
