Chili crisp is a Chinese condiment consisting of crunchy fried chili flakes, garlic and shallots or onion suspended in seasoned chili oil, providing both heat and a crisp texture. It developed from earlier Chinese chili oil traditions and became widely known internationally through commercial brands such as Lao Gan Ma, which popularized a shelf-stable jarred version. Chili crisp is used as a table condiment and cooking ingredient, spooned over noodles, dumplings, rice, eggs and a wide range of other dishes.
