Coconut butter is a paste made by pureeing the entire flesh of the coconut, including both its natural oil and its fiber, into a smooth, spreadable product, distinguishing it from coconut oil, which is the pure fat pressed out of the flesh alone. It is solid at cooler room temperatures and softens when warmed, similar in behavior to other nut and seed butters. Coconut butter is used as a spread, in baking, and as an ingredient in some raw-food and vegan dessert preparations.
