Cuttlefish

Cuttlefish are marine cephalopod molluscs related to squid and octopus but distinguished by an internal, gas-filled shell called the cuttlebone, which they use to control buoyancy, along with large, W-shaped pupils. As food, cuttlefish are prepared worldwide in dishes ranging from Italian risotto nero, colored and flavored with the animal's own ink, to Portuguese choco stews, Indonesian balakutak and Sri Lankan hot butter cuttlefish, and dried shredded cuttlefish is a popular snack in East Asia. Their flesh is firm and mildly flavored, similar to squid, and their ink is used as a distinctive dark, briny flavoring and dye in rice and pasta dishes across several cuisines.
