Dragon Fruit

Dragon fruit, or pitaya, is the fruit of several climbing cactus species in the genera Hylocereus and Selenicereus, native to Central America and now widely cultivated across Southeast Asia, especially Vietnam and Thailand. The fruit has a brightly colored pink or yellow skin covered in leaf-like scales, enclosing white or magenta flesh flecked with hundreds of tiny edible black seeds. Its flavor is mild and lightly sweet, and it is most often eaten fresh, chilled, or blended into juices and smoothie bowls.
