Geoduck

The Pacific geoduck, Panopea generosa, is a massive saltwater clam in the family Hiatellidae, native to the eastern North Pacific from Alaska to Baja California, its name derived from a Lushootseed word. Its shell measures 15 to over 20 centimeters, but its extraordinarily long siphon can extend up to a meter, making it the largest burrowing clam in the world. Geoducks are among the longest-lived animals on Earth, typically living about 140 years and, in one recorded case, 179 years, with scientists reading their annual shell rings to determine age and reconstruct past climates. The meaty siphon is prized for its savory flavor and crunchy texture, especially in Chinese hot pot and Japanese sashimi, and as of 2011 commanded over 33 US dollars per kilogram in China, supporting an 80 million dollar industry across Alaska, Washington, Oregon and British Columbia.
