Gooseberry is the fruit of Ribes uva-crispa, a thorny shrub native to Europe, the Caucasus and parts of North Africa, producing small round berries that range from green to yellow, red or purple depending on the variety. The fruit has a tart, sometimes sour flavor when underripe and a sweeter taste once fully matured, and is traditionally used in Britain for gooseberry fool, pies, crumbles and jams. Gooseberries are closely related to currants, both belonging to the genus Ribes.
