Kokum butter is a solid fat extracted from the seeds of Garcinia indica, known as kokum, a fruit-bearing tree native to India's Western Ghats. The seed contains twenty three to twenty six percent kokum butter, which remains solid at room temperature, and the fat is used in the preparation of chocolate and sugar confectionery. It is distinct from the dried rind of the kokum fruit, which is used separately as a souring agent in curries and dishes across Maharashtra, Goa, Karnataka and other Indian regions.
