Merguez is a red, spicy fresh sausage of Maghrebi cuisine made from lamb, beef or a mix of the two stuffed into lamb-intestine casings, colored and flavored with cumin and chili pepper or harissa along with seasonings such as sumac, fennel and garlic. It is an important part of Algerian, Moroccan, Libyan and Tunisian cooking and became widely popular in France from the 1960s and 1970s onward through Algerian immigration. It is usually grilled and served in sandwiches with fries and Dijon mustard, and appears in the French dish couscous royal even though sausage is not part of traditional Maghrebi couscous.
