The fish has a mild flavor and is eaten fresh, grilled or smoked in cuisines across the Mediterranean, the southern United States and parts of Asia. Mullet roe is also prized on its own, cured and dried into a delicacy known by names such as bottarga in Italy and karasumi in Japan.
