Neufchatel is a soft, slightly crumbly, mold-ripened cheese with a bloomy rind, made in the Neufchatel-en-Bray region of Normandy, France. It is among France's oldest cheeses, with production documented back to around the sixth century during the Frankish era. It resembles Camembert and Brie in appearance, sharing a dry white edible rind, but has a saltier, more robust flavor and a distinctively grainy texture, and is traditionally shaped into hearts as well as logs and boxes.
