Pecan oil is an edible oil pressed from pecans, native trees of the southern United States and Mexico, producing a mild, subtly nutty oil with a relatively high smoke point. It is used in salad dressings, light sauteing and baking, and is regionally associated with Southern United States cooking, where pecans themselves are a prominent ingredient. Pecan oil is produced in smaller commercial quantities than more common nut and seed oils such as peanut or sunflower oil.
