Fats and Oils

Pequi oil is a pale yellow seed oil extracted from the seeds of Caryocar brasiliense, a tree native to Brazil, and is used directly as a cooking oil. It is composed mainly of palmitic acid, about 44 percent, and oleic acid, about 52 percent, with smaller amounts of linolenic and stearic acids, and its production is being developed among indigenous communities in Brazil as a means of economic development.
