Pike is a predatory freshwater fish, most notably the northern pike, Esox lucius, found across lakes and rivers of the Northern Hemisphere in North America, Europe and Asia. It has a long, torpedo-shaped body, sharp teeth and lean, firm white flesh that carries many small bones, requiring careful preparation. Pike is a traditional ingredient in French cuisine, most famously in quenelles de brochet, and in Ashkenazi Jewish cuisine, where it is one of several fish used in gefilte fish.
