A pumpkin seed, also known as a pepita, is the edible seed of a pumpkin or certain other squash cultivars, typically flat and oval with a white outer husk and light green interior once the husk is removed, though some pumpkin cultivars are huskless and grown specifically for their edible seed. The seeds are nutrient- and calorie-rich, with an especially high content of fat, protein, dietary fiber and numerous micronutrients, and the term can refer to either the hulled kernel or the unhulled whole seed, though it most commonly refers to the roasted end product eaten as a snack.
