Razor clam is the common name for several species of long, narrow, thin-shelled bivalve mollusks, named for their resemblance to a straight razor, found burrowing in sandy tidal flats along the Pacific and Atlantic coasts. They are harvested recreationally and commercially, notably along the United States Pacific Northwest coast, and are a prized ingredient in Spanish cuisine, where they are known as navajas, as well as in various East Asian cuisines. Razor clams are typically prepared quickly grilled, fried or sauteed because of their delicate texture.
