Requeijao

Requeijao is a whey cheese from Portugal and Brazil, resembling ricotta in texture, made from the whey of cow, goat or sheep milk and ranging from solid to creamy depending on the variety. It is eaten as a spread and used as a filling in pastries such as queijada, and the Portuguese variety from Serra da Estrela has held Protected Designation of Origin status since 2005.
